Tasting #18 - Piattelli Malbec

Professional Wine Review: This offers luscious dark plum, dried cherry and mocha notes that are supported by medium-grained tannins. Chocolate, cream and spice flavors fill the midpalate and linger on the rich finish. [1]

Wine Folly Review: Malbec is best described by WineFolly as a dry, full body wine with equal levels of tannins and acidity. With primary flavors such as red plum, blackberry, vanilla, sweet tobacco, and cocoa. On the darker side of red wines, this is not one to miss out on. [2]

Personal Wine Review: I have reviewed a few Malbec wines throughout the course of this class, but I think this one was one of the most intense and vibrate Malbec wins I have ever had. The wine had this incredibly underwhelming aroma to it, it made itself seem as if it was a light wine. This is quite the contrary, the wine was intense, very dry, and with a strong finish. Literally "woah". It was hard, jammy, and tasted of licorice and dark fruit. It was sweet but also not sweet. It was a great wine that I would definitely try to have again.

This refreshing, fruit-forward White Zinfandel has aromas of ripe strawberries and raspberries with the perfect touch of sweetness. Pairs well with baked Brie. [1]

Wine Folly Review: Described as "a kind of rosé", this varietal looks and feels like a white wine but it has the taste and aromas of a semi-deep wine. Originating from the 1970s, this wine shows no signs of going away. Centered heavily on it's rich and flavorful experience, White Zinfandel does not disappoint. [2]

Personal Wine Review: I found this wine to be quite surprising. Upon smelling the wine, I found it to be floral, earthy, but also dead? I honestly don't know why I found it to smell dead, but it was. The wine seemed to be light bodied, but that is the characteristics of a rosé. When I tasted the wine, I found the wine to be acidic but smooth at the same time. Hints of blood orange and some sort of apple were also found. Overall this wine was fantastic and I would have it again. This wine was not consumed with anything.

Tasting #15 - Apple Barn White

Professional Wine Review: A delightful fusion of two distinct fruits, this wine is sure to please your house guests! The combination of these two fruits creates a beautifully balanced profile that dances between sweetness and acidity. A pale golden hue with a greenish tinge, you'll pick up aromas of ripe, juicy grapes and fresh picked apples coupled with similar flavor character. [1]

Wine Folly Review: I was unable to find any article on the Wine Folly website or section of the Wine Folly book that covered any part of this wine. I even attempted to research the region, and that also did not work.

Personal Wine Review: The feel of this wine was light. It was as if the glass that the wine was being carried in was ten times the weight and presence of the wine. Providing a strong sense of sour, asphalt, and burnt rubber; This wine did not set itself up for victory. Clearly, the main aroma and flavor of the wine was going to be apple. Although, the "varietal" of apple was yet to be determined. Upon tasting the wine, I would it to be extremely sweet and smooth. It was a very pleasant experience. I would say that the wine was made of the Golden Delicious apple varietal. Overall, I enjoyed this wine and would have it again.

Tasting #16 - Rocca della Macie Chianti Classico

Professional Wine Review: Ruby red tending towards garnet. Rich, intense and complex notes of cherry, plum, and spice. Dry, soft, gently tannic with good structure.

This wine pairs well with red meat, roasts and game. Decant one hour before serving. [1]

Wine Folly Review: Listed as bone-dry and full of tannins, this Italian wine from Tuscany has the opportunity to provide many flavors. Chianti, based on the grape known as Sangiovese, provides flavors and aromas of cherry, plum, tomato leaf, leather, and clay pot. Meant to be served warmed or at room temperature and decanted for 30 minutes, this wine is a staple in the wine world. [2]

Personal Wine Review: I have had chianti once before tasting this wine and I really wanted to be taken aback with this one. Prior to tasting the wine, I found the wine to be medium bodied with aromas of spice, plum, and a light hue of acidity. Upon pouring the wine onto my tongue, I found the wine to be quite unbalanced. It was flabby, extremely tannic with a hidden throat punch of acidic nature. It seemed that the wine "expired" in a sense. I did not enjoy the wine, and therefore have yet to have a good experience with Chianti.

Tasting #14 - Truth and Valor Cabernet Sauvignon

Professional Wine Review: The Cabernet Sauvignon presents deep aromas of black cherry and cranberry with hints of tobacco and toasted oak. Smooth, integrated flavors of plum, pomegranate, and cassis reveal hints of black olive with earthy undercurrents. Lifted acidity adds length to a soft, supple finish. [1]

Wine Folly Review: A full body, tannic and dry wine, Cabernet Sauvignon is not a stranger in the world of wine. One of the most consumed varietals, you are able to find passionate flavors of black cherry, black currant, cedar, baking spices, and graphite in the wine. [2]

Personal Wine Review: What an AMAZING wine. Probably one of the best wines I have had during the duration of this course. From an outward view, the wine felt dense and full. It smelled heavy of jam, strawberry, and just DARK fruit. Upon placing this wine in my mouth, I was immersed in the most smooth, dry, and wonderfully balanced wine I have ever had. The flavors lingered so beautifully with its slightly tannic and sugary nature. I can't say much more than just positive things about this wine. Just wow! Again, this was not consumed with anything else because this wine is capable of holding its ground all by itself!

Wine and Cheese Pairing #2

THE CHEESES

Roth Kase Havarti Plain: I have never had Havarti plain before, at least not in my mind I have not. That being said, this cheese was wonderful. It was soft, creamy, and very light. Just from using my past experiences, I could already see that this cheese would pair amazingly with most of the wines we were going to taste this evening. I would but Havarti up there in my tier listing of favorite cheeses.

Drunken Goat: Woah! Just woah! I was not expecting to enjoy this cheese! It was smooth and yet bitter at the same time. The finish on this cheese lasted longer than the other cheeses we were trying. Interestingly enough, the cheese had a flavor that resembled heavily on olive oil. I love olive oil, so maybe that is why I enjoyed this cheese so much.

Sarvecchio Parmesan: Parmesan! What to say about the classic home cheese for pasta. Very hard, very strong, and very rich in flavor. I am not one to simply eat Parmesan outright, but this cheese was good. I could not say the same for what my two friends think of this cheese. To put it simply, "I will be grating this for pasta later." I don't believe that my two friends are as open to experimenting and enjoying different foods in different ways than what we have become accustom to. Overall, an amazing cheese!

THE WINES AND PAIRNGS

The Wines

Block Nine Pinot Noir (Left), Ruffino Pinot Grigio (Middle), and Biltmore Riesling (Right) ready for tasting

Block Nine Pinot Noir: At first inspection, this wine provided aromas of dark fruit and oak with the addition of being jammy and medium in body. This Pinot Noir seemed promising, but it was flat and flabby. There were virtually no flavors in this wine! I was still interested to see whether or not this would have effects on the cheese or if the cheese itself will have effects on the wine. Maybe the cheese will bring one of these mysteriously hidden flavors from the depths of the wine into the light of my taste buds.

Roth Kase Havarti Plain: Unsurprisingly, the Havarti dumbed everything down in the wine. Whatever tannic components that the wine had were further neutralized. It didn't make the wine or the cheese worse, but I don't think I would have these two together again.

Drunken Goat: The Goat cheese was able to attack the other end of this wines components. The Goat cheese outright killed all of the acids in the wine. Sadly, while doing this the cheese itself was lost in the all of the flavor. It was as if I had something solid in my mouth that somehow didn't exist to my sense other than touch. The experience itself was pleasant, but yet again I wouldn't have theses two together again.

Sarvecchio Parmesan: Strangely enough, this was the only cheese that somehow created a good atmosphere with the wine. Making everything sharper and more acidic, the finish of this combination was good. I believe that it was the strong sharpness of the Parmesan that was able to pull these shy flavors from the wine. 

Ruffino Pinot Grigio: Where to start for this Pinot Grigio. Lightly acidic and boldly earthy, this wine was smooth and light with not a hint of a finish. The wine was so soft and light that it almost made me believe that I was having a nice cold glass of water with a slight dash of lemon juice. I was quite interested to see if the cheese would have effect at all because the wine seemed to be flavorless since it seemed like water.

Roth Kase Havarti Plain: Holy cow! This Havarti was able to amplify everything in the wine and the cheese itself too! The cheese became incredibly sharp and the wine became more like wine. I would have these two together again in the future, but since I don't really like white wine I can't say that it will.

Drunken Goat: It seems like the Havarti and the Goat cheese work on opposite ends of the spectrum for how they affect the wine. The Goat cheese was able to smoothen down this already calm wine. The cheese itself became soft and less sharp. That being said, the experience was enjoyable so I would definitely have these two again.

Sarvecchio Parmesan: This Parmesan DESTROYED this wine. Any notion of what the wine was or was trying to be was gone. The cheese was only amplified tenfold and the wine as left behind. There is not much to say since there was practically nothing to comment on! Never again.

Biltmore Riesling: Ah Riesling! Arguably the only white wine that I am even partially partial to. Providing aromas of strong acids and lemon, I was not surprised by this wine. Upon tasting the wine, I found flavors of green apple and other earthly fruits. I believe that this was the wild card in these pairings as I didn't think they were going to work with how the trend has been going. Boy how I was wrong.

Roth Kase Havarti Plain: This pairing was so perfect. Creating a balanced and calm experience in my mouth, everything as neutral in how things were changed. Both the cheese and wine exemplified eachother into a wonderful tasting experience. I would definitely have these two together again. That being said, it was not the best pairing of the evening.

Drunken Goat: This as the best pairing of the evening! The Goat cheese with this average Riesling worked together to create a calm and pleasant experienced that highlighted the richness of the cheese and the overall flavors of the wine. The olive oil flavor of the cheese and the earthy components of the wine clashed to create the most earthy and enjoyable pairing of the evening!

Sarvecchio Parmesan: Very surprisingly, this wine and cheese pairing seemed to have the opposite effect than what I was expecting. I was expecting the wine and cheese to build off each other, but instead we got a very calmed down version of both. The Parmesan was calmed down to a dumbed down strength, as I have written in my notebook, and the wine was overall just brought down a few pegs in intensity. Overall it was an okay pairing, but not the best.

Tasting #13 - Count Karolyi Gruner Veltliner

Professional Wine Review: It may be Austria's signature white grape, but it isn't the only place to get great Gruner-Veltliner.  This fantastic value Gruner is from the Pannon region of Hungary.  This delicate Gruner Veltliner offers a bright yellow color, typical aromas of green apples and also some white pepper. On the palate, there are clear citrus notes. [1]

Wine Folly Review: Originating from Austria, this grape provides the average wine enthusiast with a very high acidic experience in a medium to light body wine. Slightly more on the drier side of wines, this grape also contains virtually no tannins. You are able to find flavors and aromas of starfruit, gooseberry, green bean, white pepper, and crushed gravel. [2]  

Personal Wine Review: When conducting the "smell" test on this wine, I found it to be overwhelmingly floral, providing hints of green apple and piss. I think the smell of "piss" could be attributed to a combination of green bean and white pepper that is mentioned in Wine Folly. The wine itself seemed dense and weighty, but also floaty. Upon tasting the wine, it was smooth, lightly acidic and in body, but dry with no tannins. I did enjoy the wine, but then again I'm not the biggest fan of white wines. I don't think I would go out of my way to try this wine again. This wine was not consumed with anything else.

Tasting #12 - Port

Professional Wine Review: Warre’s launch of Otima 10 & 20 Year Old Tawny caused a revolution in Port that introduced a completely new concept to consumers, helping to rejuvenate Port’s image in the main markets. Otima is now widely acknowledged as the most successful new development in the Port trade for over 25 years.

The merit of Otima was to show Port’s versatility as an all year round, anytime drink, dispelling many of the myths attached to Port. [1]

Wine Folly Review: According to Wine Folly, Port is the flagship wine for Portugal (which makes a lot of sense). It is listed to have primary flavors of plum, dried cherry, chocolate, raisin, and cinnamon. Port is very-sweet, full body, high in tannins, and medium-to-high in acids. The ABV of Port wines are over 15%. [2]

Personal Wine Review: Before even holding the glass of Port in my hand, I had a few ideas of what it would be like. I thought it would be deep and very strong (which it was). Upon holding the glass, I found it to be very dense and heavy in body. The wine provided the strongest sense of pure alcohol that I have every smelled with wine. Behind this curtain of alcohol, there was a sweet cherry aroma that escaped. The wine tasted like cranberry raisins strangely enough, which is backed by the Wine Folly book and website. Ultimately, the wine was very alcoholic, sweet, and it held the longest finish out of any wine that I have had. I would have this again, but only for dessert (like it's meant to be consumed). No food was consumed with this wine.

Tasting #11 - Cu4tro Soles

Professional Wine Review: Cuatro Soles Merlot Mexican Wine. It is a wine with an intense ruby ​​red color of great depth and brightness. It represents aromas of red fruits, cassis and cherries, on the palate it is soft, velvety with good persistence and very balanced. Perfect combination with red pasta, pizzas and dishes with little seasoning. [1]

Wine Folly Review: Stated as being from the "most proximate wine country destination" in Mexico, this wine has the ability to be amazing. Hinting to be a blend of Cabernet Sauvignon, Merlot, Zinfandel, and other amazing reds, this red blend is an excellent representation of what makes wine so great. [2]

Personal Wine Review: At a first glance, this wine felt denser, fuller than previous wines. It provided aromas of onion, sweetness, and slight acids. I was most surprised by this aroma of onion that I sensed and that no one else that I was tasting the wine with found. This could be to my nose being messed up, but I remember that wine is different for everyone to a degree. I really did smell onion! Upon tasting the wine, I found it to be super sweet and smooth while being very light on my tongue. Hardly any tannins, presenting a lacking of the dry factor in wine, but I did find it to be very cherry in flavor. For some odd reason my roommate placed the wine in the fridge between tastings and when I had my second glass when it was chilled, the wine was 500x better. This was not consumed with any food, but I would try it again.
